Yuzu & White Chocolate Fudge

So the other week we had a bake sale for Macmillan coffee morning at work and one of my favorite colleagues (you know the ones who just make your day every time you see them) brought in some mouth watering lemon and meringue fudge. Yum.

Of course I just had to have the recipe so I could make this at home. Homemade Christmas gifts coming right up.


So I decide one night after I got back from the supermarket that i was going to try my friends recipe out. I wanted to know how much it would make and if I would need to double the ingredients or anything, just to be safe before the week running up to Christmas. I work in retail the last thing I want is to have to wade my way through the crowds of people when I have be serving them all day.


I get myself all excited.... and what happens? I don't have all the ingredients. I have a pantry which I keep full of essentials but low and behold I'm missing quite a bit. Not blaming anyone but i have my suspicions.


I decide to do what i do best.

Make it up as i go along =)


Believe it or not this is all I used.


I have yuzu extract in my pantry most of the time. Its pretty easy to come by these days., most supermarkets sell it. You can find it down the global aisle mixed in with the Asian ingredients. [one of my favorite sections]


What is yuzu?

Yuzu is a citrus fruit. It has a tart flavor similar to a grapefruit with mandarin tones.

Its commonly used for seasoning, just like you would use a lemon.


It turned out pretty good if i do say so myself. I would definitely say to play around with the yuzu and zests to find the correct balance for your own taste.


And of course just enjoy making it!



It doesn't take that long to make.

Its waiting for it to set that feels like a lifetime.

If your impatient like me you will only want to wait only 2 hours.

But trust me it is best to leave it over night.










Yuzu & White Chocolate Fudge


2 hours 20 mins

includes setting time


10 prep time

10 cooking

2 hours minimum set time

over night for best results


Ingredients: Tips:

- 1 Can Condensed Milk I find using cooking chocolate

- 400g White Chocolate easier to melt.

-2Tsp Yuzu Extract

-125g Icing Sugar You can find yuzu extract in most

-Zest of 2 Lemons supermarkets. Its sometimes

-Zest of 2 Limes hidden with the Asian ingredients.


1. Using a large saucepan on a medium heat.

add the condensed milk, white chocolate, yuzu extract and zests.

2. Stirring often so that it doesn't catch on the bottom of the pan.

until fully melted and combined.

while your waiting fr the mixture to melt,

line a 10"x8" baking tin with grease proof paper.

3. Remove from heat. Now you can add the icing sugar.

Remember to do this bit by bit so it is easier to combine.

4. Time to add it to the baking tin now.

smooth over with a spatula.

5. Time for the fridge.

Pop it straight in don't worry about covering.

Now leave it in for at least 2 hours.

Over night is best.

6. Slice into cubes.
